NOTE: Ensure your soup has plenty of liquid as this is one of the most enjoyable parts of the whole thing. Also, add plenty of meat as you may find most people enjoy that more than anything else.


The 15 ingredients you need to cook Haitian soup joumou
  • 2 pounds of pumpkin
  • 1 pound of beef
  • 2 Limes
  • 2 celery stalks
  • 5 parsley sprigs
  • 2 potatoes cubed or fresh potato
  • 10 cups of Water
  • 1 scotch bonnet pepper
  • 2 peeled carrots
  • 2 tbsp of tomato paste
  • 1 cup of tomato sauce
  • 1 cup of diced onions
  • 2 peeled and diced turnips 
  • 1 pound of thin spaghetti
  • 1 pound of chopped cabbage


How to cook Haitian soup joumou in 11 simple steps.
  1. Cook pumpkin over medium heat in 6 cups of water for 30 minutes in a medium pot
  2. Puree the boiled pumpkin in water.
  3. Clean meat with lime, rinse with hot water and drain while pumpkin is cooking.
  4. Marinate meat with meat rub then add scallions, onion, thyme, garlic, shallot, green pepper, salt, and black pepper ground.
  5. Add meat in a stockpot with oil and tomato paste. Put on fire with water to caramelize.
  6. Cover pot and cook over medium fire for 20 minutes.
  7. Add three cups of water plus pumpkin puree to bring to a boil.
  8. Add cabbage, carrots, celery, onion, turnips, tomato sauce, potato, and parsley to soup, bring to a boil, then reduce heat and simmer for 1 hour with scotch bonnet pepper on top. (Remember to remove the pepper as you stir the soup to prevent it from bursting.
  9. Break spaghetti into short pieces then cook until soft and tender.
  10. Add salt, black pepper, or hot pepper for taste.
  11. Turn off the heat, cover the pot, and let sit until ready to serve.

Soup can be made 3 days ahead; cover and chill, or freeze up to 3 months. 

This soup feeds a large crowd. If you have a smaller crew or smaller pot, feel free to halve the ingredients.
